The Norcineria, or speciality butcher shop, is one of Castelli Romani’s most important traditions. Luckily no part of the pig is wasted here. The pig provides fresh or aged produce: porchetta (roast pork), guanciale (pork jowl), sausage and naturally the typical coppiette (strips of dried pork). The butchers hand down their ancient art from father to son and are great connoisseurs of local produce.
